  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in garlic, carrots, and celery, cooking for another 5 minutes.
  2. Add the chicken thighs to the pot and cook until lightly browned on all sides. Then, add the barley, chicken broth, thyme, bay leaf, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-35 minutes, or until the barley is tender and the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot. Discard the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
